As I’m writing this post, our Spring Break is almost over. For our family, it is a transition time between winter life and summer life. Derek is a farmer and is home most of the winter. With the change in weather, the melting snow, and April just around the corner, our family ramps it up in preparation for the farming season; We finish any random winter projects we haven’t completed, Derek starts making his spring to-do list for the farm, and I start mass producing soups, baking, sauces, and basically anything else that will make life a little easier with our farmer in the field. These Meanie Munch are a perfect addition to this spring’s meal prep.
Butterscotch. Marshmallows. Rice Krispies. WOWBUTTER. All in one amazing combination of a cookie. Meanie Munch was always a quick and easy treat that my mom would throw together when we needed a simple dessert. I actually forgot about these until a few weeks ago. What’s worse, I forgot how much I love them and just how easy they are to make; Like ten minutes max! Melting the butterscotch chips and WOWBUTTER is the “hardest” part of this recipe! While this recipe isn’t my mom’s exact recipe, it is inspired by the one she used.
Meanie Munch are perfect for school lunches, a school bake sale, or a treat for any extra-curriculars you may have this spring. The list could go on. But, enough talking, let’s get to actually making these!
Tips and Tricks:
- If you’re looking for peanut-free butterscotch chips, Walmart’s Great Value brand is peanut-free.
- We use WOWBUTTER in our home, but any other peanut substitute will work.
The perfect blend of butterscotch, marshmallows, Rice Krispies, and WowButter. This quick and easy treat is perfect for any school lunch or a last-minute dessert!
- 1 cup butterscotch chips
- 1/4 cup WOWBUTTER
- 1 3/4 cup Rice Krispies
- 1 3/4 cup coloured marshmallows
Using a double boiler (or a medium-sized metal bowl on top of a small saucepan), fill the bottom saucepan with about 1-2" or water. Over medium heat, bring to a slow, gentle boil.
In the top of a double boiler, or a medium-sized bowl, add butterscotch chips and WOWBUTTER. Place on top of saucepan. Stir continuously until melted.
Remove from heat. Add Rice Krispies. Mix with spoon until combined.
Add marshmallows. Mix with spoon until combined.
Line a cookie sheet with wax paper or parchment paper.
Using a spoon, drop the Meanie Munch mixture to create 2" mounds.
Allow to cool on counter or in fridge for at least 30 minutes.
Store in an air-tight container in the fridge or freeze for up to a month.
